the ingredients:

  • 500 grams of puff pastry dough.
  • 250 ml of milk.
  • 3 egg yolks.
  • 50 grams of coarse sugar.
  • 20 grams of plain flour.
  • 25 grams of starch.
  • 1 vanilla pod (we take the seeds from it).
  • 150 ml heavy cream.
  • 125 grams of powdered sugar.
  • 30 grams of raw chocolate.

Preparing and baking the dough layers:

  • Preheat the oven at 180 degrees.
  • Roll out the puff pastry dough with a thickness of 2 to 3 mm, and it will be in the shape of a rectangle with dimensions of 20 cm, 30 cm, and for those who like the shape of a circle, they may do so as well.
  • And we separate the layers from each other, and we make holes in them with a fork or a toothpick everywhere, and we cover them with baking paper, and we put them in the refrigerator to cool for a few minutes to cool.
  • Then we take it out of the refrigerator and put it next to each other on the baking trays while it is covered, and we put it in the oven for 15 to 20 minutes, or until it takes on a golden color.

To prepare the creme patissiere:

  • Pour 250 ml of milk into a medium bowl, and heat it over a medium heat until it reaches just before boiling. Meanwhile, mix the egg yolks, 50 grams of sugar and 2 tablespoons of milk in a medium bowl, then add 20 grams of flour and 25 grams of starch and mix them well.
  • Gradually add this mixture to the hot milk away from the heat, with continuous stirring with a hand mixer.
  • Then we return this mixture to a medium heat, stirring until it thickens and becomes creamy in texture, then we remove it from the fire and add the vanilla to it and stir them.
  • We cover it with cling film so that it does not form a crust, and let it cool completely.
  • When it cools down, beat it with an electric mixer until it becomes very smooth.
  • We beat the heavy cream well until it becomes coherent, add it to the patisserie cream, put it in a pastry bag with a funnel with a little small hole, and put it in the refrigerator until we need it.

Preparing the outer decking layer:

  • Mix 125 grams of sifted powdered sugar with two or three tablespoons of water and set aside.

Tart making stage:

  • We prepare the baked puff pastry layers, take one of them and put part of the creamy patisserie mixture on it to cover it.
  • We put another layer of puff pastry on top of it, and cover it with a layer of patissiere cream.
  • For fruit lovers, pieces of it can be placed on top of this layer, and crushed nuts can also be placed.
  • Then we take a third layer and cover it from above with the powdered sugar mixture.
  • Melt 30 gm of raw chocolate in the microwave, then pour it into a pastry bag, pierce a small hole in it, and drop it on the sugar layer in the form of long lines, then walk on it with a knife in the opposite direction, so that a beautiful marble shape is formed.
  • So we put it on top of the previous layers, and we do the same steps with the rest of the puff pastry, and we put them in the refrigerator for 30 minutes, then we take them out and cut them into smaller pieces and serve them.
  • And if we find it difficult to cut it, we put it in the refrigerator for an hour, and it will be easier.
